Crunchy almonds, warming cinnamon and a hint of coconut… this pear crisp just might be the most delicious crisp E V E R. As it bakes and bubbles in the oven, the most delectable scent permeates through the entire house. I can’t even describe how good it smells… so make it for yourself and see!
Last week while I was at the farmers market, a farmer informed me that these were the last of his pears… so naturally I HAD to buy some (am I a sucker? maybe I’m a sucker…but at least I”m a sucker with delicious pear crisp!) This crisp is equally delicious with apples, but how gorgeous are these pears? The prettiest?
I’ve started planning our new kitchen! We have found a contractor to fix a rotten beam which means… once that task is complete we can (fingers crossed) move forward with putting together a kitchen. We’ve been in our house for almost three months, and this entire time we’ve been washing the dishes in the bathtub, and cooking with a two burner hot plate and a toaster oven. I have almost forgotten what it feels like to do dishes in a sink… an ACTUAL kitchen sink!?
Hot coffee, fall sunshine, kitchen planning and pear crisp… does it get better than that? Eat this crisp for dessert, breakfast or an afternoon snack!
Almond Pear Crisp
Ingredients:
Topping:
- 1/2 cup Brown sugar
- 1 cup Rolled oats
- 2/3 cup Flour
- 1/2 cup Almonds, roughly chopped
- 1 tsp. Cinnamon
- pinch Salt
- 1/2 cup Coconut oil
Filling:
- 4-5 Pears, cores removed and thinly sliced
- 1 tsp. Vanilla extract
Prepare topping: combine brown sugar, oats, flour, almonds, cinnamon and salt in a medium size bowl. Add coconut oil to oat mixture using a pastry cutter (or your hands) to combine until it’s crumbly in texture.
Prepare filling: Thinly slice pears, toss with vanilla extract and 1/2 cup of topping mixture.
Assemble: Preheat oven to 350°F.
Place pear filling in an 9 inch square baking dish. Evenly spread topping mixture over pears. Bake for 1 hour, let cool for 10 minutes, then try not to eat the entire thing!
